What Are Gelatinized Red Maca Root Chips?
Gelatinized red maca root chips are made from red maca roots (Lepidium meyenii) grown in the high Andes of Peru. The roots are harvested, dried, and cut into small pieces before being gelatinized to remove most of their natural starch content.
Because whole maca roots cannot legally be exported from Peru, maca chips are the closest form to whole maca root that can be sold internationally. They provide a traditional preparation style similar to the way maca has been consumed for generations in the Andes.

How Are Red Maca Root Chips Made?
Red maca root chips are produced from whole maca roots that are harvested, dried, and then processed into small pieces.
The general process is:
- At harvest, red maca roots are separated from other colors.
- The roots are sun-dried in the high Andes until moisture content is reduced.
- The dried roots are cleaned and cut into small chips.
- The chips are gelatinized through a controlled heating process that removes most of the starch content.
This preparation produces a traditional whole-root maca product that can be used in cooking or beverages.
How to Use Red Maca Root Chips
A traditional way to use maca chips is to cook them into a porridge. This preparation method has been used for generations in the Andes.
Some simple ways to prepare maca chips include:
- Simmer 1/2 cup of maca chips for about 1 hour and add to oatmeal or other warm breakfast cereal.
- Simmer maca chips and blend them into a smoothie.
- Steep maca chips in hot water for about 10 minutes to make a tea.
- Prepare a traditional Andean porridge such as mazamorra.
Mazamorra de Maca – Traditional Maca Porridge Recipe 
Ingredients
- 1 cup (130 g) maca chips
- 1 cup (130 g) flour
- 1/4 cup (32 g) sugar
- 2 cups milk
- Clove, cinnamon, or anise to taste
- 4 cups water
Preparation
Simmer the maca chips in water along with spices until soft (about 1 hour), adding water if necessary. Add flour, sugar, and milk and simmer for an additional 15–20 minutes. Allow to cool and enjoy. Mazamorra may be stored in the refrigerator for 1–2 days.
