Instead of relying only on extended traditional sun-drying, Premium maca roots are processed shortly after harvest using controlled low-temperature dehydration. This gives Premium maca a different processing profile from our standard maca products.
The Premium designation describes this preparation method rather than a different species or color of maca.
After Premium processing, the black maca is gelatinized using heat and pressure. Gelatinization removes much of the root’s naturally occurring starch and creates a pre-cooked form of maca.
Despite the name, gelatinized maca contains no gelatin. The term refers only to the processing method, and the maca remains completely plant-based.
Some people who find raw maca difficult to digest prefer gelatinized maca because much of the natural starch has been removed.
Both products are made from black maca roots and both undergo gelatinization. The main difference is how the maca roots are handled before that step.
