Cowboy Caviar with Maca

A big thank you to Kelly, one of our loyal customers, for sharing this tasty and flexible recipe.  It's an excellent way to get maca into your daily diet. 

  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) navy beans (or any small white bean), drained
  • 1 bag (12 oz) frozen sweet corn
  • 5 roma tomatoes, seeds and pulp removed, chopped
  • 1 green bell pepper, seeds removed, choppedCowboy Caviar Maca Recipe
  • 1 red/orange/yellow bell pepper, seeds removed, chopped
  • 1 jalapeño pepper, seeds removed, chopped
  • 1 red onion, chopped
  • 1 avocado, chopped (optional)

Combine all above in a large bowl.

In a small bowl combine dressing ingredients:

  • 1/2 cup olive oil
  • 3 Tbsp red wine vinegar
  • 3 Tbsp lime juice
  • 1 Tbsp jalapeño hot sauce (if desired)
  • 1 tsp sugar
  • 3/4 tsp salt
  • 3/4 tsp black pepper
  • 1 tsp garlic powder

Pour over the other ingredients and toss/stir until combined. Store in refrigerator.


The recipe is very flexible: Can't eat tomatoes? substitute cucumbers! Don't like beans? Leave them out! Got an extra tomato, or some extra peas? Throw them in!

I eat 1-2 cups in the morning; I add my maca powder to my portion, and stir it until combined in the dressing and the tomato juices.  I like stirring in the maca powder last minute so that I can eat as much or as little as I care to eat that day, but still get my full amount of maca - and so that others in my family can eat it without eating my maca!
