Maca powder is the most common and simple way to consume maca root.   It also has the most varieties and options.   There are 3 major ways in which maca powder can be classified:  root color, harvesting type and processing type.   Let’s take each of these one by one.

Maca root colors: Maca roots grow in a range of colors, from light beige to reddish to dark gray.   Although there are over 30 ecotypes of maca, the roots are generally grouped into 3 categories, yellow, red and black.

  • Yellow maca powder is made exclusively from yellow maca roots, which are the most common, making up about 60% of the annual harvest.
  • Red maca powder is made from red maca roots, which account for 25% of the maca harvest each year.
  • Black maca powder is made from black maca roots, which are most rare, accounting for just 15% of the annual maca harvest.
  • Tri-color maca powder, as the name suggests is made from a combination of all 3 maca root colors.  

Harvesting type: Immediately after maca roots are harvested they can be prepared for processing in 2 different ways. 

  1. The traditional way of preparation is to dry the fresh roots in the high mountain sun for 14-30 days until their moisture content is reduced to less than 5%.   This is by far the most common way that fresh maca roots are prepared for processing.  
  2. A more modern way of preparing the roots is to dry them in large low temperature (below 105F/40C) dehydrators after harvest.    This is a more costly and labor-intensive process but produces a final maca product that is higher in glucosinolate content.    The maca powders that are prepared this way are called “premium.”

Processing type:  Once dried, maca roots are ready to be made into powder.    They can either be powdered in a low temperature process, resulting in raw maca powder that has never been heated and conserves all enzymes and vitamins at high levels.   Or they can be “gelatinized” in which they are pre-cooked to help remove starch content and to make the final gelatinized maca powder more digestible.
