This is a take on the summer favorite Gazpacho soup. Adding Maca gives it a nice taste and some extra zing!
- 1-3 t Maca powder
- 4 large ripe tomatoes, chopped
- 1 fresh cucumber, chopped
- 1 to 2 stalks celery
- 1 yellow pepper, diced
- 1 clove garlic
- 1 t cayenne pepper
- 2 T olive oil or 1/2 c avocado
- basil or parsley to garnish
Blend all ingredients in a high powered blend until smooth. Chill and serve garnished with basil or parsley
