How Is Premium Gelatinized Black Maca Different?

What makes this maca distinctive is how it is processed after harvest. At about 9 months after planting, maca roots are ready to be harvested. Traditionally, the roots are dried in the sun over several weeks. Some roots, however, are taken to a processing plant where they are dried more quickly in large low-temperature dehydrators. That fresh-processing method is what makes this type of maca “premium.”

Once the roots are dried, they are ready for gelatinization. Gelatinization is a process in which maca roots are heated to about 160F / 70C. This changes the starch content of the root and creates a pre-cooked product with a different texture, flavor profile, and preparation style than raw maca. Nothing is added during the gelatinization process, and all gelatinized maca remains 100% vegan.

After gelatinization, the roots are ground into powder, tested, packaged, and prepared for sale.
