Made from a mix of about 40% yellow, 30% red, and 30% black Maca roots, our gelatinized tri-color maca is pre-cooked to remove starch content. The heat (160F / 70C) used in this process does compromise some nutrients such as enzymes and Vitamin C but makes the product easier to digest than raw maca. The advantages of pre-cooked maca powder, other than the increased ease of digestion, include somewhat more concentrated nutrient levels (since the starch content is removed).
