Our Gelatinized Red Maca Root Chips are carefully and consciously grown, processed and handled. They come from an organic farming cooperative in and around Junin, Peru. We work only with producers who own and manage their lands at a local grass roots level. The cooperative of farmers is committed both to organic farming and to producing only the highest quality Maca products.

What Exactly Are Whole Red Maca Root Chips?

Whole red maca root chips are as closest to whole red maca roots that are legally available outside of Peru. The Peruvian government has made it unlawful to transport whole roots outside of the country to prevent theft of this heritage product of the Andes. Our red maca root chips are:

How Are Red Maca Root Chips Made?red maca roots fresh

In essence whole maca root chips are simply maca roots that have been ground up into small chunks. In the case of gelatinized red maca root chips the process is the following:

  • At harvest, grade A red colored maca roots are separated from other colors.
  • They are dried together in the high mountain sun for several weeks until their moisture content is reduced to 4% or lower.
  • The roots are then taken to a processing facility where they are cleaned and run through a coarse grinding machine that turns them into chips.
  • The resulting chips are gelatinized, which means that they are pre-cooked. This process removes the starch content of the maca root making the chips easier to digest with higher nutrient bio-availability.

How Do You Eat Red Maca Root Chips?

Traditionally, dried maca roots are boiled with water or milk and sugar to make a hearty porridge called mazamorra de maca (recipe below). You can prepare red maca chips the same way or experiment with other ways of making them.

Preparation ideas for whole Maca root chips

  1. Simmer ½ cup of red maca chips for about an hour and add to oatmeal or other warm breakfast cereal
  2. Simmer ½ cup of maca chips for about an hour and add them to a smoothie
  3. Steep maca chips in hot water for 10 minutes to make a tea – add sweetener as desired
  4. Try the traditional Mazamorra recipe – this makes for a hearty meal!

  • 1 cup (130g) Maca chips
  • 1 cup (130g) flour
  • ¼ cup (32g) sugar
  • 2 cups (250ml) milk
  • Clove, cinnamon and/or anis to taste
  • 4 cups (500 ml) water

Preparation: Simmer the Maca chips in water along with spices until soft (about 1 hour), adding water if necessary. Add flour, sugar and milk and simmer for an additional 15-20 minutes. Allow to cool and enjoy. Mazamorra may be kept in the refrigerator for 1-2 days.
