What Are Gelatinized Tri-Color Maca Root Chips?
Gelatinized tri-color maca root chips are made from a traditional blend of yellow, red, and black maca roots (Lepidium meyenii) grown in the high Andes of Peru. The roots are harvested, dried, cut into small pieces, and gelatinized to remove most of their natural starch content.
Because whole maca roots cannot legally be exported from Peru, maca chips are the closest form to whole maca root available internationally. They provide a traditional preparation style similar to how maca has been consumed for generations in the Andes.

Our gelatinized tri-color maca root chips are made from a blend of approximately 40% yellow, 30% red, and 30% black maca roots grown near Junín, Peru. These roots are harvested by an organic farming cooperative that follows traditional agricultural practices emphasizing careful cultivation and responsible processing.
The roots are dried, cleaned, and cut into small chips before being gelatinized. The gelatinization process removes most of the starch content from the root and produces a traditional whole-root maca product that can be used in porridges, teas, or other recipes.

What Is Tri-Color Maca?
Tri-color maca is a traditional blend of the three primary maca root colors: yellow, red, and black. For much of maca’s long history in the Andes, the roots were consumed together rather than separated by color.
Using a blend of all three colors reflects the traditional way maca has been prepared and eaten for centuries in the high mountain regions of Peru.

How to Consume Maca Chips

Simple preparation ideas include:
- Simmer 1/2 cup of maca chips for about 1 hour and add to oatmeal or another warm breakfast cereal.
- Simmer maca chips and blend them into a smoothie.
- Steep maca chips in hot water for about 10 minutes to make a tea.
Traditional Mazamorra Recipe

Ingredients
- 1 cup (130 g) maca chips
- 1 cup (130 g) flour
- 1/4 cup (32 g) sugar
- 2 cups milk
- Clove, cinnamon, or anise to taste
- 4 cups water
Preparation
Simmer the maca chips in water along with spices until soft (about 1 hour), adding water if necessary. Add flour, sugar, and milk and simmer for an additional 15–20 minutes. Allow to cool and enjoy. Mazamorra may be stored in the refrigerator for 1–2 days.
